How IN is Chicken Skin!

So culinary happenings as of late have me swooning over chicken skin in all of its perfectly crisped glory. A chicheron lover myself, I came across a chicken version while in Dallas at The Meddlesom Moth. Drizzled with sweet and sour deliciousness, these tasty morsels were definitely the hit of the evening. Fast forward a few months to a date night with my beau at the ever popular Odd Duck, when to my pleasant surprise the always exciting menu was donned with none other than chicken skin tacos creatively constructed with refried beans and watermelon radish. Need I say more? Chicken skin is not only unexpected, but incredibly flavorful and perfectly textured. The triple threat of current cuisine if I may say so myself!

In short, if you haven’t…you MUST, as chicken skin is a total thing. Check around your local hot spots to see if it’s on the menu!

    Grebes (chicken skin) has been used by Jewish cooks forever, along with schmaltz (chicken fat). Makes the best chopped chicken livers!
