Crazy Good Crockpot Carnitas

Living in Texas, we have our fair share of amazing mouthwateringly good Mexican food. On top of tacos and enchiladas, carnitas is one of those beloved dishes that everyone has their own ‘secret’ recipe for.

Be it trial and error or divine intervention i’ve found a recipe that I absolutely love!

Ingredients
2lb Pork Butt
Pinch of Old Bay seasoning – this acts as a meat tenderizer here
1/2 tsp cumin
1/4 Orange
1 small onion, sliced
1 tbsp vegetable oil
Avocado, diced onion, lime and cilantro for toppings
 
Directions:

  • Put the vegetable oil in the bottom of the crockpot, add the onions.
  • Season the pork belly with the old bay and cumin and place in the crockpot on the bed of onions
  • Add the orange to the pot and cook on high for 8 hours
  • Set the broiler to high, remove pork from the crockpot, shred a little and place on a baking sheet
  • Broil until lightly crispy and serve with warm tortillas, diced onion, cilantro, avocado, and lime.
