Easy Peasy Egg Fried Rice

WFH (Work From Home). Every employee working the in office 9-5 prays for the elusive day where they get to bask the creature comforts of their home office (blanket statement, yes!). Days like this are perfect for that “I already have everything in my pantry/fridge” type lunch. This simple rice dish is precisely that: purge your fridge, throw it in a pan and PRESTO, lunch is served! Bonapetit! 

1/3 cup of onion – diced
1/3 cup frozen peas
1/3 cup frozen corn 
1/2 tsp chili sesame oil
1 tbsp Siracha hot sauce
1 egg-beaten
bell pepper (any color)
1 clove minced garlic
1 tbsp light soy sauce
1 scallion chopped
1 sachet – Boil in a bag brown rice

Instructions

  1. Heat oil, and combine onion, garlic,  and bell pepper in the pan and sauté for 3 minutes
  2. Add frozen peas and corn into the pan and continue to sauté for another minute
  3. Add the beaten egg directly into the pan with the vegetables, and scramble
  4. Add the cooked rice to the egg and veggie mixture along with the chili sesame oil and mix together
  5. Spoon into bowls and top with soy sauce, siracha, and chopped scallions

Notes: The wonderful thing about this lunch is that any left over veggies can be thrown in also.
